I went searching for the perfect vegetable soup but what I found was... a ton of recipes that almost hit the spot! So I combined some, changed some things, and made one that my whole family could enjoy and I'm literally so obsessed I could eat it weekly! 

P.S. Buy a vegetable chopper and make your life easier! With the chopper, the prep here doesn't take long at all! 

Ingredients:
- 1-2lbs sausage
- 2 medium/large sweet potatoes chopped bite size
- 1 small can of diced tomatoes 
- 4 cups vegetable broth 
- 120 grams chopped celery
- 250 grams chopped carrots
- 1/2 chopped yellow onion
- 1 medium zuchinni chopped
- 2 cloves of garlic

Cook sausage in frying pan while you heat your favorite soup pot on medium with a little olive oil. Add garlic, onion, celery, and carrots to pot with a little salt & italian seasoning. Cook til veggies are soft, about 5 minutes. Add sweet potatoes and cook another 8 minutes. Make sure to stir often so nothing gets stuck to the bottom of your pan! Add sausage, diced tomatoes, zucchini, and vegetable broth. If you like your soup to have more liquid, add more broth or water. I leave it on low for the day and we enjoy it for dinner! 

* For sausage: Blake likes 1lb sausage, I like 2lb. So we meet in the middle and do 1.5. Just depends on how much meat you want in your soup.
